Recipe: Mary's Coconut and Cherry Cake Loaf

Who loves bread!? Oh, I am so glad you like it, too because today's post is all about how to make my mum's Coconut and Cherry loaf. For someone who is not as great as a baker like myself this was super easy to make so anyone can bake it! Did I mention it tastes absolutely delicious?

Ingredients:
250g of Plain Flour
175hg of softened Butter
175g of Caster Sugar
2tbsp of milk
150g of glazed cherries(!)
60g of desiccated coconut

Method:
1) Set the oven to 180C.
2) Sift the flour into a bowl and add the butter, eggs and milk together and beat(so stir) until smooth.
3)Cut the cherries in half and add it into the mixture with the coconut. Then spoon it into the loaf tin and level it our.
4)Bake the loaf for 45min-1hr, until the cake as risen and seems firm and a skewer comes out clean after being inserted.
5)Remove the cake from the oven and leave to cool.
The coconuts and cherry really do go well together so if you love anything cherry or coconut definitely try this recipe out!
